Mediterranean Salad

A quick and fresh Mediterranean Salad Recipe.


  • 1 lebanese cucumber
  • 1 large tomato
  • 1/2 large carrot
  • 2 stalks green onion
  • Handful of fresh mint leaves
  • 8-10 olives to taste
  • Salt & Pepper
  • Optional – fetta


  • Juice of 1/2 lemon
  • 1 tbsp olive oil
  • Salt and pepper


  1. Chop the cucumber and tomato.
  2. Thinly slice carrot, chop the circles into tiny matchsticks.
  3. Chop green onion and greens. On an angle, slice the green onion into small 1/2cm pieces.
  4. Roughly chop the mint leaves.
  5. Compile! Combine all chopped ingredients in a bowl, add olives, sprinkle with salt and freshly cracked pepper.
  6. Drizzle over the olive oil and lemon juice.
  7. Mix lightly and serve immediately.
