Banana Bread

Easy banana bread recipe.


  • 1 3/4 cups self-raising flour & 1/4 cup plain flour
  • 1 tsp ground cinnamon
  • 1/3 to 2/3 cups, firmly packed brown sugar (adjust amount to taste)
  • 2 eggs, lightly whisked
  • 1/2 cup skim milk
  • 50g butter, melted


  1. Preheat oven to 180 degrees fan forced. Line a 11cm x 21cm loaf pan with baking paper, or you can lightly grease with butter or oil.
  2. Sift the plain flour, the self-raising flour and the cinnamon into a large bowl. Stir in the sugar. In a separate bowl mash the bananas.
  3. Make a well in your dry ingredients. Add the eggs, milk and melted butter, and stir until well combined. Add the banana and stir until just combined.
  4. Spoon or pour the mixture into the loaf pan and smooth the surface.
  5. Place in the oven for 45-50 mins or until a skewer inserted into the centre comes out clean.
  6. Remove from the oven and set aside for 5 min. Turn onto a wire rack to cool completely.
  7. Cut into slices to serve.
